Don't you know that the thickining capacity of starch is much superior to
that of flour? That's why one uses just a bit of cornstarch to get the same
thickening one would get with a lot of flour.
And since flour is 80% carbs and cornstarch is 99,59%, some maths and you
will realize that a tablespoon of flour has tons of carbs more than a half
teaspoon of cornstarch.
