On the beer side of things, there *are* old recipes for "cock ale." One
I have uses a ham in addition the whole rooster, if memory serves,
while the other merely uses a rooster.
It gets discussed sporadically, but I've never heard of anyone actually
making it in modern times--and if they did, I'd be afraid to drink it.
