Butter Mochi
BUTTER MOCHI
1 pound mochiko
2 1/4 cups sugar
1 teaspoon baking powder
1/2 cup butter, melted and cooled
3 cups whole milk
5 eggs
vanilla extract
1 cup sweetened, flaked coconut
Combine dry ingredients except coconut. Mix butter, milk, eggs, and
vanilla. Combine with dry mixture. Stir with wire whisk until smooth.
Add coconut and mix. Pour into greased 13" X 9" pan and bake @ 350
degrees for a little over an hour. Slice when cool.
