The use is for a candy sort, in which Nestles or even a Garadelli(sp?)
chocolate will not suffice (according to me). The Burgundy, along
with bittersweet and unsweetened chocolate are for making "Chocolate
Dippers" which are cut into 1-inch chocolate squares and put on a
short sucker stick to either eat or to stir into a cup of hot milk.
Rather like a fudge without nuts, though made creamier.
