You don't. The Yorkshire pudding bakes while your roast rests (take
it out slightly underdone, so it won't over cook while resting). To
make sure your Yorkshire pudding cooks in 20 minutes, you may have to
experiment with various pan sizes before the big day. Don't forget to
heat your pan up on the stove before adding the batter. Baking
Yorkshire pudding is another good use for my largest cast iron
skillet.
