My favorite way is to make a spinach - walnut - feta pesto (heretic !) then
stuff some chicken breasts with feta and capacola and bake the chicken in
the pesto with some more cap and pesto layered on top. Bake covered at
first, then uncovered to make a crust.

Serve with a side of herbed pasta and a few lemon wedges.

I'm sure it would work with basil pestos as well.
