It's not.
I've mentioned this no more than a thousand times. If you want light,
delicate, diaphanous bean skins that almost disappear, put the dry
beans directly into boiling water and cook them thoroughly
straightaway without pre-soaking. Don't pre-soak them, don't pressure
cook them, don't use Beano, don't add salt, DON'T DO ANY GOTTDAMN THING!
Jes put bone-dry beans in already boiling water and boil the damn
things till they are done. Is that too hard to understand!?
