Night is usually leisure time. Mornings, often people are rushing around
getting ready to go to work.

I wouldn't have a problem with cutting onions the night before. Wrap them
well and put them in the fridge; they'll be fine. Potatoes, OTOH, start to
turn brown the minute they're cut, unless you cover them with cold water to
which you've added some lemon juice. You could do that the night before.
In the morning rinse the potatoes and add them to the crock pot before
leaving the house.
