Great read, thanks for posting the subject. It seems that the consensus
of a lot of people is to cook ahead and make enough for leftovers for
quick meals during the week. I do that, too.

Summer is easy. Sometimes I'll make a meal out of just veggies or
potatoes and sometimes the occasional meat. Weekends are my cooking
time. I'll make food that can be reheated for several days and even
taken for lunch at work. I don't get tired of eating something I like,
usually. Can't say that's a general rule though.
