You freeze them. Cheese freezes just fine as-is (freeze quickly so large
ice crystals don't form. Eggs you freeze as liquid egg product, the
commercial stuff you can get at restaurant supply places is pasteurized
and homogenized with a bit of citric acid added. Homogenizing at home is
probably not practical, but you can certainly batch pasteurize and add
citric acid.
