I brown the meat in OO, reserve the meat, add a soffrito of celery,
carrot, onion, garlic and sometimes parsley. Then add red wine, beef
stock, and a spoon or two of tomato paste. Season with salt, pepper, bay
leaf, thyme and rosemary. Simmer until done.
