The effect can be further increased by tearing a leaf midway along one
edge perpendicular to the spine. Torn bay leaves plucked fresh off the
trees go inside fish that are to be broiled/steamed/baked/braised. If
you add bay tree branches (with the leaves on) to your fire, so much
to the better.
