Default Storing Home-Grated Cheese

Steve, in your unique situation I would suggest two ways to go.

1) just buy the shredded cheese (it's not all that bad)

2) If she has a clue to how much she will need, shred your good cheese
before you do the music lessons. Put a piece of wax paper on a cookie sheet,
shred it all over, then put in freezer until she cooks. That short time in
the freezer uncovered won't hurt it.
