Not sure why fluffiness matters (compare them sometime and you might
find the commercial grated cheese is thicker and a slightly different
shape from yours), but you'll need some preservatives because
refrigerated grated cheese goes moldy pretty fast. I'd store it in
the freezer and not care if it's fluffy or not.
