From what I gather, those work best on hard cheeses - not sure they'd
work with cheddar. Anyone care to comment?

This is the kind I used, albeit without the nice collection container at
the bottom:

I just used it on a kitchen counter and picked up the cheese by the
handful to put into the plastic bag.
