Okay, here are two possibilities

1. You're dead wrong
2. I'm using out of date information

You've been known to have a (shall we say) "unique" POV and I haven't
been inside a Church's (or eaten any) since McDonald's stopped using
beef fat so maybe they used lard back in those days.
