I like salt, but potato chips would be entirely too much. I used to use
boxed mashed potato flakes as a coating. IIRC I brushed the chicken
with melted butter then rolled it in potato flakes. Let set for a few
minutes, pop them in the oven and bake.
Corn flakes aren't bland if you add herbs and spices to them. Sort of
like a crunchier shake & bake.
