I believe that Italy has a long history of not using parmesan cheese on
fish. Parmesan is particularly piquant.

Mario Batali calls Parmesan the "king of cheeses".

I wonder whatever happened to that show 'Mario Eats Italy'. Some great
footage from the bootland.
