Default TN: 3 good whites

Monday I made toor dal with spinach & squash, warmed some leftover pimenton cauliflower & some naan, and made a salad. With dinner we had the 2008 Willi Schaefer “Graacher Domprobst” Riesling Kabinett (it’s the #2 if more than 1)
zippy, racy, a true Kabinett, beautiful apple and citrus fruit expression, minerally/slatey tones, long, yum yum. A-

Betsy made a trip to HMart and we had scallops in a ginger/soy marinade, long beans with pepper, rice, kimchi, and seaweed salad for dinner Tuesday with the 2005 Trimbach “Cuvee Frederic Emile” Riesling. Good match with the scallops, this is less austere than most young Freddies, peach and nectarine fruit with a little petrol edge, maybe not a CFE for the ages, but tasty early. B+

Last night clams with a basil puree and red pepper over pasta as well as a arugula salad, wine was the 2011 Colle Stefano Verdicchio di Matelica. Briney, nutty, green apple and citrus, good acids and good length, this is a nice wine for low teens. B+/B

Grade disclaimer: I'm a very easy grader, basically A is an excellent
wine, B a good wine, C mediocre. Anything below C means I wouldn't drink at a
party where it was only choice. Furthermore, I offer no promises of
