Default Not a fail after all

I had a hankering to make some pear and ginger muffins for brunch this
morning, and thought they might be good using an oatmeal and buttermilk
recipe. I looked up a an oatmeal buttermilk recipe online and got to
work. I figured all I would have to do is to add some chopped up some of
my candied ginger and some chunks of canned pears.

Modification seemed simple enough, since there was buttermilk I didn't
have to worry about balancing with baking soda, as I usually do with
fruit added. I added a teaspoon of dried ginger powder to the
ingredients. The oatmeal had been soaked in the buttermilk for about an
hour.

I mixed everything together, spooned the batter into the muffin pans and
stuck it int he oven for 17 minutes. They looked great when I checked,
which was when there was still about 5 minutes to go. That was when I
realized I had forgotten the pears.


At first I was disappointed, but then I tried one. Wow. They are
delicious and have a great texture. I can't imagine then being much
better with pears in. We have a small jar of pear jam. I will try that
on the muffins.
