Chicken liver is great dredged in flour and fried with too much
cracked pepper added. I also like to add a lot of ground coriander in
the dredging flour. (However, they're not that good in soup.)

Gizzards aren't that unusual, although having them on pizza was a
first for me.

That does sound unusual, but I imagine tasty if one likes gizzards.
