From my experience, oil doesn't work so good many times. A stainless steel
pan coated with melted margarine will never stick an egg. Margarine is best
for pancake cooking too, imo. I haven't used margarine in years though. I
use real butter now and I brown it before adding the eggs on low-medium
heat. They never stick.
