AFAIC, summer squash is soft skinned. If you can steam it, or boil it
and eat it skins and all, it's summer squash. When grilling it I just
brush it with a little neutral oil (Extra virgin need not apply) and
season lightly with salt & pepper. In the case of squash I do have to
watch it so it only gets lightly browned rather than "cremated".
