I frequently use eggs that have passed their "best by" date, and I have
never noticed a difference in taste. In fact, it's easier to remove shells
from hard-boiled eggs if they are not really fresh. If I am concerned about
whether the eggs may actually be spoiled, I place them (one at a time--not
the entire carton) in a bowl of cold water. If the egg floats--discard it.
