IMHO, the "why" is because people figured out prefab pressed rolled
turkey is pretty crappy stuff. People stopped buying it, so you don't
see it much anymore.

My mother served that rolled turkey to us in the late 1970's. She hated
to cook, bless her. This was easy to prepare, just put it in the oven.
We didn't complain. However, even when on a very tight budget I don't
remember looking for that frozen turkey roll.
