How about a 'make-your-own cocktail' table where people can create drinks to
go with their sundaes? You needen't provide a huge selection of ingredients,
just a couple of liquers (something coffee flavoured, something chocolate,
something strawberry-flavoured?), plenty of crushed ice, cream, egg whites
etc. and appropriate mixers - plus a couple of cocktail recipes for the
uninspired. Might be a lot of work for you on top of the sundaes, but it's a
thought.
