Why would you think wine can't be enjoyed with desserts? There are
hundreds of wines, fortified spirits, and liqueurs that can be served
with dessert -- specifically ice cream.
Ports go well with many chocolates; late harvests (zin, berry-infused,
et al) enhance an already-sweet dessert; champagnes and sparkling
wines sharpen the taste buds through their effervescence. Then there's
always the dessert apértifs (Frangelico, Bailey's, Amaretto, etc.)
Personally, I'd serve a vertical of ports (my favorite is Quinta do
Noval), Bailey's, Frangelico, Krug Champagne, Far Niente Dolce, and
coffee and tea. Also make sure you have different chocolate toppings
available -- not everyone appreciates Hershey's Squirt-n-Glop. <G>
