Another thing learned from cooking shows was to separate eggs with my
fingers. Just dump the egg into the palm of your hand and keep your
fingers just far enough apart to let the white run through. It works
great, but a lot of people are squeamish about it and don't want to
touch raw eggs. They are probably the same people who don't like to
touch raw meat.
