I don't think these were intended to be a side dish. It's a create your
own potato rather than create your own taco.

It depends on how I feel as to what I want on a baked potato. As a side
dish, most often just butter and salt. Sometimes sour cream, but I
don't keep that around all the time. If I'm making a loaded baked
potato I'll definitely add butter, the sharp cheddar and crumbled bacon.
I haven't made baked potato skins in a couple of decades. I suppose
they still show up on some restaurant menus.
