Back in the day, a crustless quiche would just have the flour as part
of the "filling"... who knows what they want today.

I'm interested too. Restaurants in Europe jumped on the less salt
bandwagon late, so I imagine it's coming anytime soon. I like gluten
free alternatives, because it's an easy way to reduce carbs.
