We rarely buy applesauce if good apples are readily available. I know
that brown sugar is the appropriate sweetener.... if the apples are so
sour that they need sweetening. If you use the right apples it is not
needed. Sweet is great as a desert apple sauce, but an apple sauce to
be used as a condiment should have some tartness to it.
