The whole thing got totally convoluted. I was talking about creamy
polenta which needs a decent amount of cream (and sometimes cheese).
Read up. No idea why she suddenly needed to call a paltry amount of
butter "dairy" as if it's bad and don't care. She's not lactose
intolerant, neither am I, nor is anyone I know and I don't cook for
anyone who keeps Kosher, so I don't give a rat's patooty one way or
the other.
Truth be told, I don't add butter to polenta anyway. I make it with
corn meal and a commercial broth (for flavor + salt). At my house
soft polenta is not served on the side, it's served *under* something
that is like gravy (mushroom ragu last time) and I don't need to make
it using anything more than those two items.
