Two new celery ideas!
I got these recipes from The Complete Book of Nutritional Healing. Can't
wait to try them! Especially the salad.
Green, Black and Red Salad
Serves 2
1 bunch celery
4 radishes, trimmed and cut into slices
10 pitted black olives, chopped
1 T VOO
1 T chopped fresh chives
2 t lemon juice
1/8 t each salt and black pepper
Remove outer dark ribs of the celery and reserve for soup. Remove leaves
and place in bowl. Cut remaining stalks into 1/4" slices and add to leaves.
Add remaining ingredients and toss. Chill before serving.
Celery Bean Soup
Serves 4
2 T OO
1 onion, chopped
4 stalks celery, chopped
3 cloves garlic, minced
32 oz. white or pink beans, cooked and drained
2 cups vegetable bouillon
Sauté the onion and celery in the oil until transparent. Add the beans and
bouillon and cook on low heat for 15 minutes. Puree to desired consistency.
Garnish with croutons.
Hmmm... Now I see two errors with the recipe. Does not say when to put in
the garlic but I would venture to guess towards the end of cooking the onion
and garlic. Also does not list the croutons. I don't think I would put the
croutons in. Not sure that they would add anything.
But it does look like these two recipes would go very well together and I
may well be serving these for Christmas along with some other sides. This
would fit the bill of meat free! And the salad would be Christmas colors.
