I no longer deep fry at home, I go out to eat deep fried food, much
safer. I actually see no reason for a deep fryer at home... most
anything that's deep fried can be cooked otherwise with almost as good
results and sometimes better. I'm not a big fan of french fries
anyway, and there are dozens of kinds in the frozen food aisle, most
exactly the same as served in restos. But I much prefer roasted
potatoes; thinly sliced into wedges, lightly coated with oil, and oven
roasted till golden and puffed like pillows makes excellent potatoes,
much better than deep fried. I also like pan fried potatoes, half
inch diced and slowly pan fried until browned and crispy. And anyway
most young folks today have never eaten a real french fried potato to
compare, all they've ever eaten are reconstituted dehys, extruded
frozen fries. Sadly there are very few eateries today that that deep
fry real potatoes.
