Yea I was baffled too. Must have been something stupid I was
overlooking. But yes in a practical sense it wasn't a big problem
as that temp was fine for the food. And again near the end of
the cook the temps seemed to get higher much easier. Not
sure what was different but I'm sure Ill figure it out.
