Preference for Carbon Steel over Stainless Steel

That's what I have too, Janet. I use the ring just to get it heated up
as much as possible and not have to hold it. When cooking, i normally
will hold it. A gas stove works ok...you just have to cook small
amounts at a time to keep it all hot at all times.
