This is relatively easy and fun to do. Slice the eggplant lengthwise into
bread-thick slices, brush with xv olive oil and either grill or saute in a
hot pan. Make sandwiches out of the slices, either open faced or 'closed
faced'. It works, but you'll need a knife and fork to eat the sandwich.
You probably could grill the slices dried and be able to grab them in your
hands. As for the sandwich filling, the sky's the limit.
