Lazy? Okay, if that's what you want to call it. I call it the
ability to make switches that don't spoil the essence of a recipe.
She's gone Paleo and has to use coconut oil. I haven't gone Paleo and
don't need to use it. Peanut oil and coconut oil both have high smoke
points and I didn't complain about anything. So , kwityerbitchin -
you're the only one complaining here. I absolutely LOVED the recipe
and will make it again.

PS: The need to switch lemon to lime was divine intervention and I
will continue that variation because it was so frackin' delicious.
Please try it sometime and feel free not to alter the recipe in any
way, shape or form.
