I have seen this happen at different restaurants. Evidently, it's a job you don't want to do in the kitchen. It's a lot nicer sitting in an air conditioned dining room. Sometimes they make won tons, sometimes they make pork hash. Boy, I sure could go for some pork hash right now. Oddly enough, we can get that stuff at a 7-11 - strange but true! :-)
