Cut it in half the entire length. The other method doesn't work on a grill,
you'd need a broiler. For smaller lobster tails I cut it in half down tot
he underside and then butterfly it open.
One more thing, it helps to run wooden skewers down throw the tail to keep
it from curling up. Makes it nicer looking and easier to cook.
