I don't know about mayo keeping food safe (probably not), but I've
never had a problem with potato salad taken to picnics even in hot
weather. You keep it in a cooler until eating time, plus it takes
several hours to go bad. Even a couple of hours later, the mayo
products haven't turned rancid. This is just a scenario in peoples
minds.
