Two Night Mexican Chicken
I defrosted a package of frozen chicken breast yesterday thinking it was
only one. Surprise, it was two. I can eat half of one.
I made a marinade of lime juice, garlic, cumin, Mexican oregano and a
dash of tequila and marinaded the two breasts for half a hour.
Grilled them on the gas grill.
When they were done, I sliced half of one breast one thinly and added
it to some sauteed red, green pepper and onion and put it all in a
heated flour tortilla. Fajita for supper.
Tonight I took the other half, cut it into small pieces and made chicken
enchiladas with green sauce and cheese.
I'll freeze the other grilled chicken breast for something else, maybe a
Mexican-style chicken salad with corn and black beans.
