Best thing is to infuse an oil and use it right away.

I've always taken a couple of crushed garlic cloves and dumped them in
some EVOO. I let them sit for an hour, then I use it for salads, et cetera.

If anything, oils that have been left at slightly higher than room
temperature (most kitchens,) will get rancid over time.
