The problem is that gluten is added to almost every processed food that
people eat. If you will check food labels you will find it, not always
stated as "gluten", but coded as well. This causes huge overloads of wheat
gluten in the diet of the majority of people in the US.

I think it is this overload, just like the overload of sweeteners that
causes most people problems.

If you cut out processed foods you will cut your health problems out as
well. IMHO.

That and there is also the school of thought that the wheat we get today is
modified from what it used to be. And that could be the problem.
