Necks are fine (even better when roasted first). Be sure to strip
some meat from them... it contributes to a great gravy. My husband
always requires mushrooms in gravy too. It doesn't matter what kind.
Roasted or sautéed, if I make gravy - it needs mushrooms and I have
grown to agree with him. Yes, we've been married *that* long.
