An omelet is a tasty and satisfying meal. Americans ate egg dishes for
dinner all the time, until the heart attack panic set in. Omelets were
a regular part of our Friday night rotation when I was a child.

I still eat omelets or scrambled eggs fairly often. But I would not
consider them "blue plate specials." I think of that as meat and several
vegetables arranged on a platter.
