You speak the truth. I've never trimmed the top of cakes because I like weird-ass, lop-sided, cakes with frosting rings. My daughter has a nifty cake saw thingie that looks like it would work real good. I should bake a cake just to try it out. As an added bonus, I get to eat the cake top. :-)
