Default Smoking on a gas grill

Chicken thighs are pretty easy, cheap and only take 90 minutes or so. I used to put them on a rack over a shallow pan as far away from the one lit burner as possible. A little lemon pepper is a good seasoning/rub. That's where I would start.

Now I have purpose built smoker and I still smoke chicken thighs. Good flavor and hard to screw up.
