Start simple with something like a pork tenderloin or a chicken, they
don't take long and are easy to handle. Then move up to a rack of ribs,
a bit more time tending the smoker and maintaining smoke. Perhaps a pork
shoulder for pulled pork next, again a longer and more detailed smoke.
Finally once you have that figured out you can try a brisket (full
packer cut, not a flat) which will be your longest smoking effort by
far, but well worth it if you're patient. Read the BBQ FAQ and learn
from it as well. You'll eventually graduate to something like an offset
smoker, but you can get the job done with a gas grill if you're careful.
