WEST VIRGINIA PUMPKIN CAKE
2 c. flour
2 tsp. soda
2 tsp. cinnamon
1 c. salad oil
1/2 tsp. salt
2 c. sugar
4 eggs
2 c. pumpkin (1 lb. can)

Mix the flour, soda, cinnamon and salt. Set aside. Mix sugar, eggs and
salad oil. Beat well. Add flour mixture. Beat again. Add 2 cups pumpkin.
Mix well. Bake at 350 degrees in angel food cake pan for 1 hour and 10
minutes. --ICING:--

1 (4 oz.) pkg. cream cheese
1/2 stick margarine
1/2 tsp. vanilla
1/2 box powdered sugar
1/4 to 1/2 c. chopped nuts

Mix ingredients and spread on cooled cake. Refrigerate.

Or this?

1 yellow box cake mix, take out 1 c.
for crumb topping
1/2 c. melted margarine
1 unbeaten egg
1 can of pumpkin

Mix egg and melted margarine with a fork into cake mix until well blended.
Press into bottom of a 9 x 13 pan with your hands. Make pumpkin pie filling
for a 9 inch pie, and pour over dough. --CRUMB TOPPING--

1 c. cake mix
1 tsp. cinnamon
1/4 c. white sugar
1/4 c. margarine

Mix together the first 3 ingredients and cut in the margarine. Sprinkle
over the top of the filling. Bake at 350 degrees for 45 to 50 minutes.
Cake is done when a knife is inserted and comes out clean.

Pumpkin swirl cheese cake

2 c. vanilla wafer crumbs
1/4 c. margarine, melted
2 (8 oz.) pkgs. Philadelphia cream cheese
3/4 c. sugar
1 tsp. vanilla
3 eggs
1 c. can pumpkin
3/4 tsp. cinnamon
1/4 tsp. ground nutmeg

Preheat oven to 350 degrees. Combine crumbs and margarine. Press into
bottom and sides of a 9 inch spring-form pan. Combine cheese, 1/2 cup
sugar, and vanilla. Mix well at medium speed. Add eggs, one at a time,
mixing well after each addition. Note: Reserve 1 cup of cheese mixture.
Add pumpkin and remaining sugar and spices to remaining cheese mixture. Mix
well and layer 1/2 pumpkin mixture and half cheese mixture over crust.
Repeat layers. Cut through batter with a knife several times for marble
effect. Bake 55 minutes. Loosen cake from rim of pan and cool before
removing rim of pan. Chill. Serves 10-12.
